Daging Masak Hitam


Finally. Mr Arthur Wee, this here is my Daging Masak Hitam cooked using the ready made paste that you kindly sent all the way from Sibu. Thank you again, sir! This masak hitam turned out superb!


I referred to Elin's post on how to go about it. What I did before cooking was marinate 400g of beef with one tub of the paste. Since the beef was cold from the fridge, I let it stand to marinate for about an hour.


When ready to cook, I heated some oil and sauteed one stalk of lemongrass and one sliced onion until fragrant. Then I poured in the marinated beef and sauteed briefly.  The smell was wonderful!

I transferred the whole lot into the slow cooker as I did not want to keep watching over the stove and risk burning the dish. 


I did not add any water because from experience, the meat will release juices and I did not want a runny dish. A few hours later I was rewarded with this beautiful masak hitam beef. Wow. It was delicious. There was no need to adjust for seasoning because everything was just right.


I have two more tubs of the precious paste and these will be reserved for a special occasion.

    1. It was splendid! So aromatic and so very tasty. The expiry date is sometime 2017 I think. I enjoyed it to the max!

  3. The best way to cook anything is the "cheat's" way....fast and easy, especially when it comes to dishes that require the assembly of a spice paste....too much work. I'm all for this kind of cooking...as long as it tastes good, who cares! ^_*

    1. I used to think that using ready made pastes was cheating and does not give me the satisfaction of achieving that "I made it from scratch" bragging rights. But hey, if the paste is good and saves loads of time, so what? Yes, I am embracing the "cheating" method hah..hah..

    1. Kak Noor punya lagi asli sebab paste buat sendiri. PH selalunya tak gemar pakai paste sebab macam tak ada kepuasan yang kita buat sendiri. Tapi kalau paste tu berkualiti dan menjimatkan masa, boleh lah pakai sekali-sekala.

    1. Hi Ayu! Saya tak pasti kalau ada di jual selain dari Sarawak. So far tak nampak di supermarket kat tempat PH. Paste ni memang bagus sebab masak hitam ni sangat sedap.

  9. Daging masak hitam, Sarawak's specialty. I love it. Beef must be tender and the gravy is thick with burst of sweetness and saltiness.

  10. Phong Hong Cheh Cheh...postage from East Msia is very expensive leh...you are one lucky lady! I searched for the paste in KL, couldn't find!

    1. Ya, previously I tried looking for the paste after trying the Sarawak Laksa paste. If go to Sarawak must borong the whole lot :D

  14. Daging Masak Hitam is a Sarawak speciality! It certainly wasn't, not that I know of when I was a nipper in Kuching. I am missing lots 😔
